About Me
Hi! I'm Hassan, founder of Honeydew. Growing up in Lebanon among olive trees and traditional recipes, I developed a deep passion for Mediterranean food. Today I bring those roots to Germany – through olive oil and recipes that celebrate culture, quality, and community. Welcome to our kitchen.

Fatteh is a beloved dish in Lebanon, and every family makes it a little differently.
Traditionally, Fatteh is known for its generous use of clarified butter – making it quite a rich dish.
In my family, we’ve developed a lighter version over generations, one that’s based on pure olive oil.
HAUPTGERICHT
Köfte is a classic in Lebanese cuisine – robustly seasoned, aromatic, and full of flavor.
In our Honeydew kitchen, this dish takes on a fresh, healthy twist:
Instead of butter or fat, it’s oven-baked with authentic, cold-pressed olive oil and refined with a creamy tahini sauce made from sumac and lemon juice.
The result is a rich yet light dish – perfect for cozy evenings and fans of the Mediterranean diet.
Hauptgericht
Our Zaatar puff pastry pie is the perfect fusion of Lebanese aromas and hearty German comfort food.
The filling combines caramelized onions, mushrooms, and authentic Honeydew Zaatar with creamy mascarpone and tomato pesto – plus tenderly seasoned chicken breast and mildly aromatic rock salt cheese.
A Mediterranean-German comfort dish that satisfies, warms, and evokes sunny evenings with every bite.
Perfect for shared meals, brunches, or whenever you want to serve something special to your guests.
Vegetarian
Lebanese falafel are a small miracle: deeply crispy on the outside, soft and herb-green on the inside.
In Germany, falafel like these are almost impossible to find — especially not in döner shops, where quick mixes replace true tradition.
This recipe brings you the real flavour you normally only taste in family kitchens in Lebanon: fresh, honest and full of soul.
Starter
Zaatar cheesy sticks are a quick and easy appetizer or snack that fits every occasion. Whether you are preparing something special for your child’s birthday, or looking for an exotic bite to serve when guests come over for dinner, this Lebanese inspired recipe is exactly what you need.
DESSERT
Knefeh is more than a dessert — it’s comfort, celebration, and pure joy in every warm bite. Crisp and golden on the outside, creamy and soft at the center, then finished with fragrant rose syrup and a shower of pistachios.
This homemade version is simple, soulful, and made for sharing — perfect when you want something special without spending all day in the kitchen.
Main Course
Tender chicken marinated in yogurt and warm spices, slowly oven-baked for deep flavor and served the traditional way with toum. Authentic, aromatic, and satisfying. Shawarma as a true main course, just like in Lebanese home kitchens.
Beilage
Tabbouleh is the purest expression of freshness in Lebanese cooking: lemony, aromatic, and vibrant, with parsley in the spotlight and bulgur as a subtle supporting note. This is the traditional family way: everything sliced by hand, gently mixed, then rested so the flavours settle and shine. The perfect side dish for mezze spreads, grilled mains, or simply with warm flatbread.
